We all know summer time is all about being outside, having fun, being at the beach, lake, on the water, whatever it is that you enjoy! One thing is for sure, it is definitely about staying cool and having a nice little treat! This is my go-to salad just for that!
1 small red onion
3 roma tomatoes
1 cucumber (large)
A light drizzle of olive oil
Dash of cracked black pepper
Dash of himalayan sea salt
Dash of parsley flakes
(optional) cilantro for flavor
optional) feta cheese for flavor
This makes about 6 servings and will last about 3 days!
I personally love to pair this with a quinoa grain salad, it makes for the perfect pair and is sure to fill you up! Plus it is vegetarian! Who doesn't love that! If you would like to add extra protein to it, of course grilled chicken or shrimp would always go really well with this! It is the perfect salad to bring to any summer event or picnic and is sure to be a crowd pleaser!

Hello, Hello to all my friends reading this, thanks for stopping by my page! Making this blog is very long overdue and I am happy to have you here with me along my journey. I am so excited to jump into the blogging world with both feet in front of me and can’t wait to share a little of my life and passion with you all!
When it comes to my passion in life, there are two things that I am so passionate about. One of those is the work I do with individuals with special needs and all that comes along with it, the advocacy, the good days, the bad days and all the in between. My other passion, is why you all are here! That would be interior design and all that comes along with it, even down to the nitty gritty, yes, I even mean the cleaning, purging and organizing all of us dread so much. To me, it gives me life thinking of all the possibilities I could do redesigning a room, reorganizing a room or even purging a room! (When necessary that is… however, I am a furniture hoarder, who says a good slap of paint and a new set of knobs can’t completely make you re-fall in love with something.)
The reality is, if my room is looking like the top few pictures, you know there’s a room somewhere looking like this in my house, today.. it was my dining room/mixed area. We have several projects going on since moving into our new house and somehow it’s where everything kind of just ends up. (P.S. Don’t worry, plenty of blog post will be put up for all the many projects we have going on! All super easy and done affordably.)
So many fun things in store for the next few months as well as daily lifestyle tips on traveling, pups, bargains and anything and everything that seems as though it could be helpful! I am all about finding bargains and easy ways to DIY how to do things. When you are a college student and just purchased your first home you definitely have to think about what to spend your money on! Only a handful of things are purchased at full price and if they are we did a lot of shopping around before purchasing them. All other things come from a handful of great local shops as well as online shops that I'll be creating a blog post for all to see! Can't wait to grow and take this adventure with all of you!
